Finnish Cardamom Cookies

History

This recipe has its origins in Finland and is a very tasty dessert. Its namesake ingredient is from India and is a member of the Ginger family. I was first introduced to them many Christmases ago and since then have had them every Christmas.

Recipe

  1. Cream butter and sugar.
  2. Add egg and beat.
  3. Stir in cream.
  4. Sift flour, baking powder, salt, and cardamom and add to the rest of the ingredients to make a stiff dough.
  5. Chill thoroughly.
  6. Shape dough into 1-inch diameter balls and place on baking sheet.
  7. Bake at 375 degrees F for 10 -12 minutes. Makes about 36 cookies.
